Walking round and round an ancient stone basin, this man crushes olives to an oily pulp, in much the same way they were crushed thousands of years ago. The raised inner and outer edges of the crushing surface keep the rolling wheel on course. This reconstructed press is in the courtyard of the Israel Museum in Jerusalem.
